this is a post I've been contemplating in my head for a while now, have been trying to field-test, breaking it down by de-proach.  This is what I have so far that comes to mind:

Mt Baker Hwy:  Graham's, Milano's or Boundary Bay

Hwy 20, above Baker Lk Turnoff:  Good Food (has outperformed the other Marblemount options)

Hwy 20, below Baker Lk:  Burlington Cafe (limited hours), Trainwreck in Burlington

I was agreeing with you until you said Boundary Bay.  There's better food, service, and beer elsewhere in Bellingham.  There's a pizza place in Concrete (I think) called Annies (maybe?) that I've eaten at a few times on my way down from Hwy 20.  Pelmeni in Bellingham wouldn't come close to satisfying me after a long day in the mountains unless I ordered 2 or 3 servings but happily they are open until 3am when I need them.

If I can wait until I'm back in Bellingham then I'd go for Bayou on Bay or any of the Jalapenos locations.  Usually my first stop is anywhere with chocolate milk and the rest can be sorted out later. :)

Benjarong Thai Restaurant, in Monroe. Dine in or take out.

Snoqualmie Pass

the cart that sells coffee and stuff by the comfort station. Gifrickenormous corn dogs, fresh and dripping from the deep fryer. Probably a good idea to have an AED on hand.

for North Cascades Ruth Creek access:
Milanos in Glacier is amazing and well worth the $.

for Beacon Rock in the Gorge:
East Wind in Cascade Locks has good burgers and milk shakes.

Mt Adams:
another vote for the diner in Trout Lake

Rhodie's is delicious, as is the Aardvark. Sad to hear that the Mint is gone.

Anyone eaten at Hooper's Deli in North Bend? Rumored to be pretty tasty.

For Adams, the place in Trout Lake that has huckleberry milkshakes also serves up a perfectly acceptable burger and fries.

Hwy 20- East 20 Pizza in Winthrop has some of the best thin crust I've had anywhere, and usually has Boundary Bay IPA on tap!

Hwy 2 Eastside - South (in Leavenworth) followed by the Icicle Brewery

Hwy 2 Wetside - the taco truck (used to be called Dani's, might have a different name now, but still great burritos) in the gravel parking lot immediately after you turn south on 203 in Monroe. Huge, delicious burritos for $4.

Anywhere on Hood - Charlie's in Gov't Camp
