When I was driving an '83 VW Rabbit I'd pop out the fuel pump fuse and tuck it under the floor mat. Even if someone saw the fuse they would probably have a difficult enough time figuring out where to put it that I always hoped they would wander off after the next shiny squirrel. The car was never stolen but I don't know if that's because nobody wanted it or because the fuel pump didn't work.

I have a battery switch on my Subaru, I have it because of some strange voltage drain in the system (usually that means a hot ground, no one has been able to find it). I don't always remember to use it every night. I have a hidden switch for the alarm (horn/siren disconnected) so if the battery is off and you reconnect it the car still will not start. The switch or disconnect I have has a part you can remove making it impossible to connect the battery and start the car.
