I'll sometimes set a new track to check out snow stability. That, and efficiency, usually take precedence for me over aesthetics.

Skiing with a guided party in B.C. a couple weeks ago, I picked several things that the guides seem to prefer.

* Track not too steep (to avoid wearing out the clients)
* Rounded paddle turns instead of kick turns (for same reason)
* Long switchbacks (to survey lots of terrain)

The last item was especially interesting. The idea is to fully survey the general area that you'll be skiing to check snow conditions, wind effects, and explore what you would otherwise miss if you just switchback up a narrow corridor. This also avoids wrecking your upward corridor for the descent by making a million switchbacks in it.
