I second that wayback/ST setup is good. It's not too bad a deal either if they are in good condition. I have something very similar and it works well for resorts, but the weight savings are especially great for touring.
Keep in mind that you have to have a Tech (dynafit, TLT) compatible boot for this, e.g. the white&black Scarpa Tornado Boots (shown next to the Baker/Fritschi skis in the first ad) will NOT work on the dynafit setup, and neither will your current downhill boots. Ensure that the boots you get have metal fittings in the toes and heels if you are investing in the dynafit tech binding.

The Wayback is a very nice touring ski. Similar cut to the Mt. Baker but with a subtle rocker, which can make a world of difference in difficult snow.
Note that a 181cm K2 is more like a 185cm in other manufacturers' skis. K2 measures skis differently than others. If I were OP's size (which I last was in 7th grade) I'd go with 174cm in a K2 touring skis (which is like other mfrs' 177-178).

I ski on 181 Waybacks with dynafits and really enjoy them. I was considering 174s when I bought them, but don't regret the 181 at all. Yes they ski a bit long with K2 measuring and a flat tail, but they hold an edge well. I'm 5'9" 165lbs.

If you want something shorter and don't mind finding/choosing your own bindings, this seems like a good deal too:

good price, my two cents is an 82mm waisted ski will be a bit on the narrow side for winter touring and you'll end up in the backseat a lot...probably be a nice spring mtneering ski, but i'd stick with 88-90mm minimum... 95-100mm in the waist would probably be better for an all-arounder (unless you're planning to ski a lot of steep & icy, then opting for narrower sticks might make sense). Or if you're primarily interesting in powder pigging, then 100, 115, or wider might be a good option.
