Alas, I've only been in alpine gear once and have been a long-time tele boarder. But I just can't ignore how much lighter the AT gear has gotten without a similar evolution in tele. That and a couple experiences with crust and watching my AT friends at least survive it with some semblance of pride left.
So I'm looking to put together an AT setup that is light and versatile. Looking at the Dynafit boots/bindings -- I could mount these on my Coombbacks -- so any advice would be helpful on where to start. Thanks.

Sounds like you got the right gear figured out and already have boards in hand.
You might find some used Dynafit boots reasonable here or on other sites. It's rare you'll see used Dynafit binders under 250 frogpelts ($). Folks tend to keep them and recycle them onto new boards.
You made the right decision though -- Life will be nicer for you now, just like it did for AT Anonymous (In the video).

I guess it depends on who you talk to.
For me, I'd give the Coombacks a thumbs up for winter skiing.
I've tried a lot of combinations of gear in my 20 or so years of trial and terror in the backcountry and have kinda settled on two ski "go to" quiver of skis (along with another half a dozen or so pairs who's primary duty is to collect dust in my basement)...
one pair for winter skiing and the other for summer skiing.
For summer I go for skis that are bit thinner under foot and lighter than the Coombacks. Summer skiing for me is more about lighter loads and more summer corn, even more fun

I switched to AT from tele after 20+ yrs then convinced my wife to switch too. Can't beat AT for saving the knees (up and down), for releasibility and safety, and for light weight.
What is your boot size? If you are lucky enough to wear a MP 29 I could sell you TLT5 Mountains (with after market Palau touring liners), 182 cm Dynafit Stokes with Radical ST bindings, and Dynafit skins for $500, all in very good shape--see if you can beat that for pricing
