Food ideas for Hut Ski Trip

Hi all,

I'm doing a 5-day trip in the Methow next week in the hut system out there.

I've never done one of these ski-to-the-cabin trips, and need to plan the food for a few dinners ahead of time (we're having our gear hauled in).

Any suggestions on meals that are hearty and easy to make? Gluten-free suggestions welcome too (we have a skier that is gluten intolerant).

Some things I've done:
- Lasagna, I've re-heated in a cast iron pan on stove top at a hut, would be hard in a pack though
- Risotto (pre-mostly cooked)
- Burritos are always easy
- Pasta w/ smoked salmon
- Jello cheese cake (cool in the snow)

As long as the huts have stove, pots and water;
dry pasta
dry beans
hard cheese aka parmesan, romano, etc
cans of tomato sauce or better pre make your own and freeze in zip locks and should hold up in the cold during the day while hiking.
dry rice
and any dehydrated items that will reconstitute in water to add to the above mentioned items.
tortillas corn or flour have excellent shelf life after opening
some dried meats aka salami rounds and smoked sausages.

Smoked salmon.  Check out Costco for large portions.

Honey Baked Turkey (pre-cooked) from Honeybaked Ham in Bellevue.  Any leftovers make great sandwiches.

For the gluten-free carbo part of your meal:  quinoa, rice, tubes of pre-cooked organic polenta (Trader Joes).  Check out PCC for products made from rice, i.e., pasta, desserts. 

Check out farro (emmer wheat), an interesting, delicious ancient grain containing significantly less gluten than modern wheat.  Your gluten-intolerant friend may already know if they can eat farro.  Normally, farro takes about 45 min. to cook.  However, last week at Trader Joes I found packages of partially-cooked farro that claim to cook in 10 minutes.

If you are having your gear hauled in (and out?), you can bring anything you want regardless of weight and bulk, including coolers.
