Shuksan via the Sulphide? The Sulphide itself isn't steep, but the summit pyramid sure is. More of a 1-2 day climb really, but I'm sure it would be fun to hang out in a beautiful place for an extra day and do some laps.
Larrabee would be fun too, one that's on my list.

Are you looking for 3 different day trips or a one 3-day trip? Either way, pick a spot and stick with it, either Hwy 542 or Hwy 20.
Hwy 542
Shuksan can be done in a day but I wouldn't recommend it as a solo trip, Goat Mountain would be good, so would several day tours near the ski area. You can start at the ski area and head south east to Mt Anne, west towards Coleman Pinnacle, or north west towards Herman Saddle/Mazama dome, north up Herman. Coleman Pinnacle is not steep but it is a nice day in the mountains. Winchester would make a good place to base camp and go for Larrabee, Goat, or a Pleiadies (sp?) chute or 2. You can also go up Glacier Creek road towards Heliotrope but that puts you onto a glacier. Everything that I've recommended so far except for Heliotrope and Shuksan should just be snowfields but be warned that there are significant glide cracks that have opened up as the snowpack is moving down the hillsides.
If you go out Hwy 20 you can camp in several spots along the highway and the Birthday Tour, Heather/Maple Passes, and Easy Pass are all good day trips. There is a lot more out that way too but those are the ones that I have experience with on a split board.
I've been to most of the places mentioned on a split this year (most in the past month or 2) except for Goat and Mt Anne. Hope this helps and I don't think I've given away any secrets.
