for the iPhone you might want to try using Gaia GPS applicaion which uses USGS map layers including off line. www.gaiagps.com/

you can create a track in Hillmap and import that track into Gaia easy... Likewise, you can record a track in Gaia then drop that onto Hillmap and see how your route played out on a big screen.
