I've been looking into getting some of these:

It would give the option to swap between my Axl's and dynafits. Seems like a solid product, the images on the website are a bit old. My understanding is that I can keep my six hole mounting pattern and just leave the plate in place if I swap bindings.
Having just snapped skis in half right along some old holes, I'll drill as few as I can.

I use sollyfit (dynafit-salomon) plates and they're sweet. Mounted on wailer 112s, they're an awesome resort ski with alpine boots, and a great winter touring rig with the dynafits. I'll echo Mofro on the swap time - 30 mins is the best I can do. I don't care much about the small weight penalty, I have a dedicated spring/summer mountaineering ski for that.
Inserts are a good product too, but I chose the plates for ease of installation and fewer holes in the skis.

I put quiverkillers on all my skis, and can't complain. They are pretty cheap, easy to install and have survived a winter of abuse. I thought about the plates, but they are expensive, especially when you have more than one pair of skis - quiver killers cost about $30/pair of skis per pair of bindings. They allow me to have alpine & touring bindings on my megawatts with no additional weight, its a pretty nice system.
