I'm very partial to cookies ( surprise! ) but it almost seems like a cliche for the CookieMonster to submit a recipe for cookies. ( Moderators: feel free to punish me if you think this is a bad thread. Suggested Punishment: I am a big fan of cheap cookies and I am not sure I could endure being forced to eat expensive ones. )
Pasta Arrabiata
1 tbsp olive oil
1 carrot diced
1 stalk celery diced
1 tbsp garlic
1 tbsp chili flakes
1 jar of pasta sauce
1 cup of red wine
1 lb of ground meat
1 box of pasta
Saute carrot, onion, garlic, chili flakes in oil until soft.
Set aside in a bowl.
Saute ground meat until cooked.
Add sauteed vegetables to meat.
Add sauce and wine to vegetable and meat mixture.
Simmer over medium heat for 1 hour.
Cook pasta until you're happy with it.
Drain pasta but do not rinse.
Mix pasta with sauce and cook additional 15 minutes.

Risotto with Butternut Squash
Ingredients:
•6 cups chicken (or vegetable) stock
•1 cup dry white wine
•½ tsp saffron threads
•2 tbls unsalted butter
•2 tbls olive oil
•1 medium onion, peeled & minced
•1 large clove garlic, peeled & minced
•3 cups butternut squash, peeled, seeded & cut into ½ inch dice
•2 cups Arborio rice
•½ cup freshly grated (Pecorino or) Parmesan cheese
•3 tbls finely chopped fresh sage leaves
•Freshly ground black pepper to taste
Directions:
1. In a saucepan combine the broth, wine and saffron. Heat over low heat.
2. In a large heavy skillet (at least 10 inches) combine the butter and olive oil over medium heat. Add the onion and sauté 5 minutes. Add the garlic and squash; sauté 5 minutes. Add the rice and stir to coat evenly.
3. Add the both mixture gradually, adding about ½ cup at a time. Cook on medium-low heat, stirring often, until each addition is absorbed by the rice
4. Continue adding the broth until it’s absorbed and the rice is creamy and firm but not hard in the center. Total cooking time should be 30-35 minutes
5. Stir in the Parmesan, sage and pepper.
Serve immediately. Makes 10 Servings

Great topic, Cookie.

I posted a recipe some time back myself... so I guess it wouldn't seem very appropriate for me to punish you with expensive cookies for doing the same, eh? Guess you'll just have to continue your own self-punishment

The butternut squash recipe sounds especially yummy - I'm guessing the wine and saffron is what nails it. For day tours, I'll often make my own french onion soup and carry in thermos - bold flavor, hot and salty.
