Ive used binding bags and they work. If one is handy with a sewing machine you can make your own. keeping the grit out is important to keeping the binding working properly . Dynafit ,alpine and yes Mike even those new freepivot tele bindings don't like that road blasted grit. Ive since graduated to a ski box where the the problem becomes edge and binding wear from being jostled around with your partners gear.
I just rememberd one thing you should do with a bag approach. To keep the bag from flapping to self destruction is to wrap it with bungee or shock cords.
On the other hand 3 pin bindings work and we might just end up with them again in a post apocalyptic world.

Best bet is to either get a full ski bag -- or better yet replace your ski rack with a roof top box -- a roof top box protects your skiis from the elements and prying eyes and well as providing overflow gear capacity.

If you have dynafits you don't need a car. They are sooooo light you should be touring to the mountains and helping the environment. 
Considering the punishment they take when skiing and touring I don't think you need a cover but to each his own.

Now that the licencing of tech fittings has eased I expect there will be a bigger range of compatible binding cover bags available.
Maybe we'll see some some light weight, aerodynamic Lycra jobs from the the Euro rando racers? After all gas is really expensive over there.
Perhaps even a dynafit ski tote?

Put them inside the car where they belong. I am always amazed at the amount of SUV's driving to the pass with only one person, yet they put their 1,000 dollar skis on the rack. Treat your skis right. Let them stay inside with their owner.
