We're a group of beginning AT skiers, however we are experienced climbers with winter camping and avalanche safety knowledge. We're looking for a good spot to go camp out for a night somewhere near Leavenworth (we're heading to Wenatchee for Christmas, and thought we'd get a trip in on the way.) Any suggestions for a scenic one night trip in this area, with some easy slopes to try out the skis on ?

Pending snow...I would suggest Jove peak, I've not had the occasion yet, but would like to O'night out there this season.

So, the description I found of this is for ADVANCED skiers. I've been skiing like 3 times. I'm a quick learner, but not sure I qualify as advanced. Is there some easier terrain around there? Also, I'm easily irritated by snowmobiles, so a lack of them would be nice.

Tronsen Meadow near Blewett pass.   Off limits to sleds.   Fairly short logging road ski in to large gentle meadow suitable for camping and beginner practice turns.   Current snowpack is only about a foot -- which might barely suffice for the roads and the meadow.  Another couple of feet of snow will open up a lot more options in the area.   Perhaps Weds storm will do that.

Another option that should have more snow is out of the Salmon Le Sac sno-park

Ski road 4315 up to 4600 ft and then skin 1/2 mile directly up a minor ridge to the top of Sasse ridge. (past 4600 ft road 4315 crosses an avalanche prone slope -- and takes like 2.5 miles to get to the same spot)  A number of good campsites just to the east of the ridgetop.   Really excellent begginner and intermediate skiing in the clearcuts to the north and east,

I imagine you are aware that learning to ski in back country conditions is not a fast track to proficiency. I'd highly recommend investing in some ski area lift tickets to get you quickly up to speed. Take along a knowledgeable, and patient downhill skier friend, or better yet take lessons. There must be some cheap night skiing lesson/ticket packages at the Summit. It will be well worth the cost and time invested. What better thing to do on a weekday evening after work? Good luck

For example the Washington Alpine Club (WAC) Wednesday night tele/rando series.

One nice thing about the WAC is the Guye Cabin located along the Alpental road.  Come up Friday night and ski the whole weekend at Alpental or numerous Snoqualmie backcounty locations with minimal driving.  But still have the comfort of a hot shower and fire place.
