This is taking edge work to the next level, from what I do -- can you post a picture of the steel you're talking about? I've got files and diamond stones, but the only steel I use is the cutting blade on my base flattening/structure tool...

Sorry for my sloppy word usage. I'm sure that I used to call my burnisher a steel for some reason.
Clem gives the correct term: a burnisher.

And FYI, a page showing how the burr on a cabinet scraper is generated. Not what you want on a ski edge however.
