I've used the Theta LT with soft snowboard boots, and they fit, but just barely. It would depend on your boots. The Minuteman is a roomier cut and might work better, though the little thigh pockets are useless.
I've been using Columbia Titanium bibs for the last 10 years and they have been bombproof. They are starting to wear out finally and I'm looking at getting some new pants as well. I'm looking at the Columbia fresh pow full-zip pants w/removable suspenders. The suspenders are nice to keep out excess snow and for when the powder is deep. My titanium pants worked great in all seasons, and the built-in gaiters were not a problem with snowboard boots.
I use the Arc'teryx theta sk with soft boots no problem. Spendy pants by very, very nice indeedy. If you watch you can sometimes find them on sale like I did.
