There are other factors that the bootfitter may not being sharing with you, even though they should. Boot size, foot size, and street shoe size are only part of the story. It's also very important to consider Arch Length, the length from back of heel to first metatarsal head. In a properly fitted boot the toes are really just along for the ride while the rest of the foot supplies the control. If the foot has a shorter arch length than overall length it may measure lets say a 27.0 while your arch is closer to a 26.0. This is one reason many bootfitters size down. They should then begin blowing out the toe box to accomidate those long toes.
Additionally most lower shells are built to accomidate a full size range (27.0 & 27.5) Many times a good bootfitter will select the next shell size down (26.0 & 26.5) if you're near the small size of the range and have a low volume foot and/or a disproportionate arch length.
This isn't conspiracy just the "tribal knowledge" that the average person doesn't posses. Overall your experience with a bootfitter should be a partnership with shared feedback and respect for both individuals viewpoints and experience.

"At that point I jump in and tell him "there is no way in hell a 26 will fit her feet". Bring us a 27 and a men's Crispi 27 to try. The jackass wouldn't budge."

Jackass is right; why would a salesperson ever refuse to allow someone to try on a boot?

FWIW, I recently bought a new pair of t1's and I went small. I normally wear a 10 street shoe, and I bought a 26 mondo. I do have a low volume foot, especially over the instep. So we just punched the hell out of the toe in the liners and the boots fit great. In fact, I feel like I finally have a pair of boots that work for me instead of against. I used to have to ball up my toes to get my foot not to move around when turning. Not anymore. I ski area and bc and the fit is great for both. My only worry is that as I continue to pack out the liners I will end up bottoming out the middle buckle; already I have only 4 notches left when I crank them down. Does anyone know if Scarpa makes shorter replacements?
