I'm looking at a sweet deal on some used 167 cm Mt. Bakers. I'm 5'9", 170 lbs and an intermediate, non-aggressive skier. Mostly going to ski the backcountry with Dynafits. Think they'll work? What is the downside of a shorter ski?

that would be a good size for you, I wouldnt go longer than 170 and k2s run long so that will be plenty of ski

Kinda disagree with previous poster.
At your size and weight a longer ski would normally be advised IMHO.
I am 6-1, 190 lbs and after many tries found that I like a ski in the 188-190cm range.
I bought a pair of 176mm Dynafit Mustah Ata's in the belief that the shorter length would be lighter and more easily turned etc.
I ended up selling them after one season as they where just to short for me and where "squirrelly."
I would advise a minimum of 176mm for a person your size but have never skied K2 skis !!!

I agree with Scotsman's thoughts. My wife is 5'-4" and much lighter than you
, she is skiing on 167 cm K2 Shuksanne's with Dynafits. This is a great length for her. I am 6'-0", 185 lbs and ski 184 Volkl Mantra's with Dynafits. I am very happy on these skis.
Most of the backcountry ski manufactures offer sizing information which includes body weight. If you can not find this information online, contact the manufacturer and ask for their recommendation. I have been on skis in the backcountry that are too short, it can make for challenging skiing (going over the handlebars repeatedly in a fresh powder
).

I would also go a lot bigger.
On a 167cm ski you're going to always be in the backseat in new snow.
Even on corn or hardpack a 167cm ski is going to be super squirley.

I'm convinced that people will begin skiing longer skis in the backcountry.

I think as long as they are a newer model Baker you'll be good since the last couple years have more width tip to tail. We are the same size, and though I ski a little longer ski, I've skied that size no problem. Sure you'll want a fatter or maybe longer ski on pow days, but no one ski does it all. The Baker 167 would be good for your quiver at the right price. If you were paying retail I'd say go with the 174. FWIW.
